The truffle has French origins. It is called this because it recalls the shape of the most famous wild truffle which grows at the roots of trees and which everyone knows for its unmistakable scent. It was 1828 when cocoa as we know it today was born: that is, separated from the cocoa butter which makes the chocolate solid. In 1879 it was the turn of milk chocolate and thanks to experiments on this new chocolate, ganache was created. Now the ingredients are all there: thus the chocolate truffle was born which would delight the noble French palates and would only find its way to Europe and the rest of the world in the early 1900s.
