The truffle has French origins. It is called this because it resembles the shape of the more famous wild truffle that grows at the roots of trees and that everyone knows for its unmistakable scent.
It was 1828 when cocoa was born as we know it today: that is, separated from the cocoa butter that makes the chocolate solid. In 1879 it was the turn of milk chocolate and thanks to the experiments on this new chocolate, ganache was created.
Now all the ingredients are there: this is how the chocolate truffle was born, which would delight the noble French palates and would find its way to Europe and the rest of the world only in the early 1900s.
