If it is true that “rice is at the center of everything”, as has always been the claim of gliAironi, it is equally true that panettone is at the center of Christmas.
Therefore, for this Christmas, the company symbol of the excellence of Vercelli rice, gliAironi has chosen a partner of great level to create a unique and special panettone.
Galup, a history of local entrepreneurship, with an almost century-old tradition in the production of great Christmas leavened products, has been able to interpret the products of gliAironi by creating a limited edition panettone without equal.
Thus was born Nero, a creative panettone but with firm roots in the territory.
A panettone made with rice flour, and embellished with candied rice grains and drops of jellied Black sake. A panettone that tells a story. A story made of traditions that meet: the excellence of Vercelli rice, the ritual of Japanese sake, the art of Pinerolo leavening. To put them together is Penelope, a variety of local black rice that we wanted to rediscover to make excellent products: our Black sake, unique in the world, and a light and tasty rice flour.
A unique product, a Gran Galup panettone made with ingredients of excellence and with the addition of drops of gelled sake in the dough, processed according to the artisan tradition, characterized by long and patient leavening, which gives rise to a completely innovative product. Galup is much more than a brand, it is a beautiful and important Italian industrial history that, in its sector, has changed and made the history of a national product: The panettone.
Panettone Galup is in fact the result of an intuition that becomes reality in a small oven in Pinerolo, a town in the province of Turin at the foot of the Cottian Alps, and which over time has become a symbol of Italian pastry, known all over the world, thanks to Pietro Ferrua. Its panettone is lower and wider, the dough lighter has a unique feature, it is covered with a "Round and gentle" hazelnut-based glaze from the Langhe. The icing is spread by hand, therefore irregular, full-bodied and crunchy and decorated with sugar and almond grains. The pastry, and its panettone, have a name that recalls tradition and identifies the territory: Galup, which in the Piedmontese dialect means greedy, delicious. This is where the story of a dessert begins that in almost 100 years has remained a faithful companion of our moments of celebration.
Galup's history is approaching the century and, since 2014, it has been led by Giuseppe Bernocco, president of GLP s.r.l. together with partner Sebastiano Astegiano. A path of growth traveled daily, with long-term projects, which have been able to give new life and visibility to the historic brand, strengthening it and expanding the important link with the territory.
Today, innovation and tradition, it is the balanced and winning combination that guides Galup's choices. For the Pinerolo-based company it is essential to maintain constant attention to the high quality of the product, starting with the careful choice of raw materials, and to continue to produce high-end products. Today as yesterday, the mother yeast used for the production of panettone and colombe is that of Pietro Ferrua's 1922 which, refreshed daily with flour and water, continues to guarantee great unique leavened products that bring with them an unmistakable flavor of history and tradition: the taste of excellence known and recognized all over the world. gliAironi is not just a rice producer.
GliAironi has always wanted to be a spokesperson for the culture and historicity of an excellent Made in Italy product, telling it grain after grain. In these lands, reclaimed and cultivated in 1100 by the Cistercian and Benedictine monks, Vercelli rice was born, which since then has been the flagship of the productions of this area.
